WELCOME.

annie's macaroni and cheese, sliced apples {only when peeled}, english muffins with butter, fruit smoothies, rice and beans, pork {only when served chipotle style}, soup {cheddar broccoli for sky and chicken noodle for lu} and pb&j without crust. happily eaten 21 times a week...sometimes more when a late-night snack is in order. so how to turn lu and sky into young food enthusiasts? a blog. a fun {so fun} way to track new foods and share the adventure with family and friends. thanks to georgetown early learning center for the ingenious idea of 'no thank you bites' {such a simple rule: please take a bite before you say 'no thank you'}. now off to plan tomorrow's menu...NIGHT.

  3. Homemade Granola
~ Makes 48 Cups ~ Can be frozen in an airtight container for future use

    Ingredients:
12 cups old fashioned rolled oats
    1 cup wheat germ
    1 cup packed brown sugar
    1 ½ cups maple syrup
    3 Tbsp water
    2 Tbsp cinnamon
    1 Tbsp vanilla
    1 tsp salt (optional)
1 cup canola oil (can substitute vegetable oil or olive oil)
2 cups shredded coconut (optional but tasty)
    2 cups dried cranberries
2 cups raisins (I mix golden and regular)
    2 cups sliced almonds

Preheat oven to 250 degrees. Mix all the ingredients, except the cranberries and raisins, in a very large mixing bowl (I use a stock pot for less mixing mess.) Spread onto large sheet pans and bake for 1 hour and 15 minutes, stirring every 15 minutes to achieve an even golden brown color.

Remove from oven and transfer back into large bowl/stockpot and stir in raisins and cranberries until evenly distributed.

NOTE: Any dried fruit (apricots, figs, blueberries, etc) will work.

Anyway- we contacted our family's west coast dried fruits and cherries maven to see if she might have some exciting & wholesome recipes.
